CHAMPAGNE MELON SOUP

Difficulty:

Preparation Time: 20 minutes plus chilling time
Yield: 6-8 servings

3 cups cantaloupe
3 cups honeydew
1 cup fresh orange juice
2 tablespoons fresh lime juice
1 1/2 tablespoons honey
2 cups Brut Champagne
Fresh mint leaves for garnish
Sugar

  1. Purée cantaloupe, honeydew, orange juice, lime juice and honey in batches in a blender until very smooth.
  2. Within a half hour of serving, add cold Champagne to soup. Stir to blend well.
  3. Serve in chilled glasses rimmed with sugar. Garnish with mint
    leaves.
